Cornmeal muffins

Here’s a delicious recipe for cornmeal muffins that are slightly sweet and have a wonderful texture!

Cornmeal Muffins

Ingredients:

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar (adjust to taste)
  • 1 cup buttermilk (or milk with 1 tablespoon vinegar)
  • 1/4 cup vegetable oil or melted butter
  • 2 large eggs
  • Optional: 1 cup corn kernels (fresh, frozen, or canned) for added sweetness and texture

Instructions:

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a muffin tin with paper liners or grease it lightly.

  2. Mix Dry Ingredients: In a large bowl, whisk together the cornmeal, flour, baking powder, baking soda, salt, and sugar.

  3. Combine Wet Ingredients: In another bowl, whisk together the buttermilk, vegetable oil (or melted butter), and eggs until well combined.

  4. Combine Ingredients: Pour the wet ingredients into the dry ingredients and stir until just combined. If using, gently fold in the corn kernels.
